AMARETTO BROWNIES


INGREDIENTS:
4 squares unsweetened chocolate
¾ cup (1 ½ sticks) butter or margarine
2 cups sugar
3 eggs
1 teaspoon vanilla
1 cup flour
1 cup chopped nuts (optional)
¾ cup amaretto (or any other liquor – optional)
Heat oven to 350 degrees (325 degrees for a glass dish)

Grease a 10 x 10 pan.

Melt chocolate and butter until butter is thoroughly melted. Take off heat and stir chocolate until completely melted. Stir sugar into the chocolate mixture until well blended. Mix in eggs and vanilla. Stir in flour and nuts until well blended. Spread mixture into greased pan.

Bake 30 minutes or until toothpick comes out with fudgy crumbs. DO NOT OVERBAKE. Pour ¾ cup of amaretto liquor over brownies. Cool completely in the pan.

WHITE FROSTING

Combine 1 stick very soft butter
1 teaspoon vanilla or rum extract
2 cups powdered sugar

Beat all ingredients together until smooth and spreadable. Spread the white frosting over the top of brownies , being careful to spread all the way to the sides of the pan, completely covering the brownies.

CHOCOLATE GLAZE

Combine 12 ounce package Nestles Morsels and 1 tablespoon of shortening.
Melt the above together in a double boiler or pan. Mix until melted and do not boil.

NOTE: I specifically use Nestles Morsels because they melt smooth. I have tried other brands, but they have a "gritty" consistency.

If you do not want to use liquor on these brownies, you may use almond or rum extract. I have also made these brownies without any liquor and they are just as tasty.

A friend gave me this recipe several years ago. I have modified it over the years and have had fun experimenting with this recipe.
