Baked Potato Soup


INGREDIENTS:
 
14 large Potato clean and prick and bake for 1 hour at 400 degrees (use pulp only) (see skins below)
When cooked, cool, cut potato off skin and cut in chunks.
In large deep soup pan, melt 2/3 cup oleo over low temperature. Stir in 2/3 cup all purpose flour slowly till smooth. Slowly add 6 cup milk stirring to make smooth
Add 1/2 to 3/4 teaspoon salt, 1/2 teaspoon pepper
Add potato chunks.

Optional: small cubes of ham is wonderful
Heat till hot on low heat only, do not over cook or scorch. (and or in microwave by bowel) chop 4 green onions and divide add half, put rest as optional garnish
Optional garnish, Bacon, cooked and crumbled;. 1 1/2 cup (5oz) shredded cheese; sour cream

Yields 10 cups
