Bec's Bread Pudding


INGREDIENTS:
 
1 loaf raisin bread (broken up)
4 cups 1% milk (scalded) or (1/2 & 1/2) milk may be used
6 eggs (if watching diet) may use 12 egg whites
2 Tablespoons vanilla
1 Tablespoon apricot brandy
1/2 cup brown sugar
1 teaspoon salt
1/2 teaspoon almond extract
1/2 cup parkay margarine (melted)
1 teaspoon allspice
1 Tablespoon cinnamon
1 cup granulated sugar

First: Mix together bread cubes and the scalded milk in a large bowl then (set aside). Mix together eggs, vanilla, brandy, brown sugar, and salt almond extract. Combine the egg and bread mixture with a wooden spoon and pour into a lightly greased 13" by 9" by 2" pan. Pour melted margarine over this. Mix together cinnamon, allspice and granulated sugar and sprinkle over top of all ingredients in your pan. Bake at 325 degrees on the top rack of preheated oven over a pan of (water) sitting on bottom rack for 45 minutes to 1 hour. Check after the 45 minutes (NOT) before. You may pour your favorite sauce over top once ready to serve, or top with ice cream or a whip topping. Great all by itself.
