Bill's Mop Bucket Chili


INGREDIENTS:
 
1 1/2 lbs lean (93%) ground beef
3 cups BLACK onions chopped fine
2 15 oz cans peeled and chopped tomato
2 minced garlic cloves
1 15 oz can tomato sauce
2 15 oz cans dark red kidney beans (with liquid)
2 15 oz cans light red kidney beans (drained)
2 6 oz cans tomato paste
2 Tbs olive oil
1 tsp chili powder
1 Tbs Tabasco sauce
1 (2 if you dare) habanera chili pepper chopped fine
2 bay leaves
1/2 tsp paprika
1 tsp salt
1/2 tsp dried oregano
dash cumin
1/2 cup finely diced jalapeno peppers

Preparation: Brown and drain beef, sauté' onion and garlic in olive oil for 3 min, combine all ingredients in suitable pot (cast iron preferred), cover and simmer for 2 1/2 hrs. Remove bay leaves. Serve only with saltine crackers. This is SPICY HOT chili. The habanera is the world's hottest pepper (I kid you not!!!!) Have ice cream and a fire extinguisher available. The unaccustomed would be willing to drink the contents of a mop bucket to put the fire out. A true chili-head will like this chili served with a cold beer. This one makes your lips sweat. Enjoy.
