Blend of The Bayou
INGREDIENTS:
1 - 6 ounce package of cream cheese
1 stick of butter
1 pound of shrimp
1 pound of crab meat
1 pound of sliced mushrooms
2 cups cooked rice
1 large onion, chopped
1 bell pepper, chopped
3 ribs celery, chopped
2 tablespoons of olive oil
2 tablespoons minced garlic
1 teaspoon black pepper
1 teaspoon red pepper
1 can cream of mushroom soup
1 teaspoon Tabasco sauce
1 cup yellow cheese, grated (preferably sharp cheddar)
Melt cream cheese with butter. Sauté onion, bell pepper, celery and garlic in olive oil. Add to first mixture. Sauté shrimp in skillet, using a little more olive oil, if necessary, 3 to 4 minutes (until pink). Add to first mixture; shrimp, soup, mushrooms, seasonings and crab meat. Mix well. Stir in rice; mix. Top casserole with cheese and bake in 9 by 13 inch glass baking dish at 350 degrees for 30 to 35 minutes.
