Cheesy Vegetable Crepes


INGREDIENTS:

2 frozen Basic Crepes (recipe below)
1 package (10 ounces) frozen ratatouille
1/2 CUP (2 ounces) shredded Cheddar cheese

Thaw crepes as directed in Basic Crepes recipe. Preheat oven to 350 degrees F. Heat ratatouille according to package directions; drain, reserving liquid. To assemble, spoon half of ratatouille down center of each crepe. Sprinkle each with 2 tablespoons cheese. Fold opposite edges to overlap filling. Place, seam sides down, in buttered baking dish. Sprinkle each with 2 tablespoons cheese. Bake 10 to 12 minutes until cheese is melted. Meanwhile, heat reserved liquid until hot and bubbly, stirring occasionally. To serve, spoon sauce over each crepe. Serve immediately.

Makes 2 servings

Note: Creamed vegetables may be substituted for ratatouille.
