Chicken Cashew Casserole
INGREDIENTS:
2 (10 1/2 ounce) cans cream of mushroom soup
1/2 cup of water
1/2 cup finely chopped onions
1 (5 ounce) package of cashews, chopped into pieces
2 1/2 cups cooked chicken, diced
1 (4 ounce can mushrooms, drained
2 (3 ounce) cans chow mein noodles, divided
paprika
butter
2 cups diced celery
Blend soup and water until smooth. Add onions, celery, cashews, chicken and mushrooms to the soup mixture. Mix gently until ingredients are combined. Fold 1 can of noodles into the soup mixture. Pour into a greased casserole dish (2 quart baking dish). top with remaining noodles and sprinkle with paprika. Dot with butter and bake covered for one hour in preheated 325 degree oven.
Makes 4 to 6 servings.
