Chicken Rice Dish
INGREDIENTS:

1 large boiling chicken
3 large strong onions
1 tin tomato puree, or full tube
1 tablespoon salt
1 tablespoon cayenne pepper
1/3 cup water
Method:
There are 3 ways of cooking this recipe. Large pan, pressure cooker, or casserole dish (oven dish). Joint chicken, or chop into pieces after removing bones ,( if preferred ) Place into chosen utensil, add the thinnest sliced onions you can possibly achieve, If using oven dish ,combine all ingredients , and cook in moderate oven for 1 hr 40 minutes. If using pressure cooker, or pan. combine all ingredients and bring to boil , If using pan boil for 3 minutes. Reduce heat to minimum , and simmer for 20 minutes (pressure cooker) or until chicken starts to leave the bones (about 1 hour pan method ).
Serve with rice
