Cottage Cheese Pancakes


INGREDIENTS:

1 cup all purpose flour (or can be divided into smaller portions)
1 cup cottage cheese
1 cup milk
4 eggs separated
1 tsp sugar (optional)
favorite fruits & nuts (I use blueberries, bananas, and pecans)


In bowl add flour, cottage cheese, milk, sugar. Separate eggs put egg whites in separate bowl; and yolks in batter. Beat whites till they peak then fold into batter. Heat griddle to 425 - 450, spray with oil. After putting batter the size you want on griddle or pan, arrange fruit and nuts then put a light coating of batter over the top so the fruit and nuts are inside. Brown, then turn and brown till slightly firm. We even eat them for dinner and can be made for as many people as you want. Great with your favorite syrup.
