Éclair Cake
INGREDIENTS:
1 box of graham crackers
2 - 3 ounce boxes of vanilla instant pudding
regular or fat free
3 cups milk
9 ounce carton of whipped topping
regular or fat free
Line bottom of 9 x 13 inch pan with crackers. Mix milk and pudding together until thick and then fold in whipped topping. Spread half mixture on crackers, add another layer of crackers and cover with the rest of pudding mix. Add another layer of crackers on top of pudding.
Frost with favorite chocolate frosting.
This is better if the cake sets for awhile before serving.
