Egg Casserole
INGREDIENTS:
2 cups soft bread cubes
2 Tablespoons butter
1/2 lbs. fresh mushrooms
2 Tablespoons butter
8 eggs
1/2 lb. grated Swiss cheese
12 slices bacon
1/2 teaspoon seasoning salt
1 cup milk
salt and pepper
1/2 cup bread crumbs
Soak bread cubes in milk. Fry bacon - drain - cool - and crumble. Reserve some for topping. In a medium bowl, scramble the eggs lightly in butter, add soaked bread cubes, seasonings and mushrooms. Alternate scrambled eggs, cheese and bacon in at least two layers in a greased casserole dish. Sauté bread crumbs in the other 2 tablespoons of butter, add reserved bacon and sprinkle on top of casserole.
Bake at 400 degrees for 15 minutes or until top is golden brown.
