French Breakfast Puffs
INGREDIENTS:
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1/2 cup sugar
1/3 cup shortening or vegetable oil
1 egg
1/2 cup milk
1/2 cup sugar
1 teaspoon ground cinnamon
6 tablespoons butter or margarine, melted
Lightly grease 12 muffin cups; set aside. Stir together flour, baking powder, salt, and nutmeg, set aside. In mixer bowl cream together 1/2 cup sugar, the shortening, and the egg. Add flour mixture and milk alternately to cream mixture, beating well after each addition. Fill prepared muffin cups about 2/3 full. Bake in 350' oven for 20 - 25 minutes or till golden brown. Combine 1/2 cup sugar and the cinnamon; set aside. melt butter or margarine; set aside. remove muffins from oven; immediately dip into melted butter or margarine, then into the cinnamon/sugar mixture till coated. Serve Warm, makes about 12 muffins.
