Italian Pasta Stir-Fry


INGREDIENTS:

1 package (8 ounce) linguine, uncooked
1 tablespoon olive oil
2 large garlic cloves, pressed
1 medium zucchini, sliced
1 medium onion, chopped
2 medium tomatoes, seeded and chopped
1/4 cup snipped fresh parsley
1 teaspoon dried basil leaves
1 teaspoon dried oregano leaves
1/8 teaspoon salt
1/8 teaspoon ground black pepper
1/4 cup (1 ounce) grated parmesan cheese

Cook pasta according to package directions; drain and keep warm. In wok or deep-sided 12 inch skillet, heat oil. Add garlic, stir-fry 15 seconds. Add zucchini and onion; stir-fry 2-3 minutes or until crisp-tender. Add tomatoes, parsley, basil, oregano, salt and pepper. Gently cook and stir 1-2 minutes or until thoroughly heated. Remove from heat; stir in pasta. Sprinkle with cheese; serve immediately.
