Linguini with White Clam Sauce
INGREDIENTS:
2 cloves of garlic, minced
1 medium onion, chopped (or onion powder
4 Tablespoons olive oil
3 Tablespoons flour
2 - 6 1/2 ounce cans of minced clams, reserving juice
1 1/2 cups milk
1 or 2 Tablespoons cooking sherry
1/2 cup of chopped fresh parsley
1/8 to 1/4 teaspoon pepper
Linguini or Fettuccini noodles
Freshly grated Parmesan cheese
Sauté garlic and onion in oil for 1 to 2 minutes. Stir in flour and juice drained from clams. Add milk, sherry, parsley and pepper. Stir about 5 minutes or until sauce thickens. Stir in clams. Cook pasta according to directions on package. Spoon sauce over pasta and sprinkle with grated cheese on top.
