Louisiana Tomato-Rice Gumbo
INGREDIENTS:
1 chicken breast, deboned and cut into pieces
2 tablespoons margarine
1/2 cup chopped onion
1/2 cup chopped green peper
1/2 cup chopped celery
1 garlic clove, minced
1 package (10 ounces) frozen okra, thawed and sliced
1 can (16 ounces) crused tomatoes
1 can (13 3/4 ounces) chicken broth
1 small bay leaf
1/2 teaspoon sugar
1/4 teaspoon salt
1/8 teaspoon thyme leaves
Dash of pepper
1/2 pound raw shrimp, cleaned
1 1/3 Minute Rice - uncooked
Cook and stir chicken in hot margarine in a large skillet until lightly browned. Stir in onion, green pepper, celery and garlic; cook until tender.
Add okra, tomatoes, broth. bay leaf and seasonings. Bring to a boil. Reduce heat; cover and simmer for five minutes, stirring occasionally. Add shrimp and cook for five more minutes. Remove bay leave. Stir in rice. Cover; remove from heat. Let stand five minutes and serve.
Makes 8 servings.
