Microwave Fudge
INGREDIENTS:
1 Ib confectioners sugar (3 1/2-4 cups)
1/2 c cocoa
1/4 Ib margarine
1/4 c milk
1/2 c chopped nuts
1 t vanilla
Lightly grease an 8 inch square dish or pan. Set aside. Place sugar and cocoa in medium sized, heat resistant, nonmetallic mixing bowl. Stir to combine. Add butter and milk to sugar-cocoa mixture. Do not stir. Heat, uncovered, on full power for two minutes. After cooking, stir just to combine ingredients. Add nuts and vanilla. Stir until blended. Pour into prepared pan and refrigerate for one hour before cutting and serving. Makes 2 to 3 dozen squares.
