Pecan Pie Squares
INGREDIENTS:
3 cups Gold Medal all-purpose flour
1/4 cup plus 2 tablespoons of sugar
3/4 cup margarine or butter softened
3/4 teaspoon salt filling (below)
Heat oven to 350 degrees, Grease jelly roll pan, 151/2 x 101/2 x 1 inch. Beat flour, sugar, margarine and salt in large bowl on medium speed until crumbly (mixture will be dry). Press firmly in pan. Bake until light golden brown, about 20 minutes. Prepare filling, Pour over baked layer: spread evenly. Bake until filling is set, about 25 minutes; cool. But into 11/2-inch squares. 70 squares.
Filling:
4 eggs, slightly beaten
11/2 cups sugar
11/2 cups Karo light or dark corn syrup
3 tablespoons margarine or butter, melted
11/2 teaspoons vanilla
21/2 cups chopped pecans
Mix all ingredients except pecans until well blended. Stir in pecans.
High altitude directions (3500 to 6500 feet); Increase first bake time to 25 minutes. Decrease the 11/2 cups sugar to 11/4 cups and corn syrup to 1 cup.
