Potato Topping
INGREDIENTS:
1 chopped onion
1 crushed clove of garlic
12 closed mushrooms
Fry 1 chopped onion , 1 crushed clove of garlic , and 12 closed mushrooms , quartered, in 1 tablespoon of oil until the onions are softened. Add 3 tablespoons of tomato puree , salt and pepper to taste. Fry for 1 minute , stirring to avoid sticking. Add 1 tin of cubed corned beef and fry for a further minute. Serve on top of mashed or duchesse potatoes with fruity brown sauce.
