Pumpkin Cookies 2
INGREDIENTS:
2 15 1/2-oz. cans pumpkin
3 eggs
3 TBSP. shortening, heaping
11/2 cup sugar
3 tsp. vanilla
3 tsp. salt
6 cup flour
3 TBSP. cinnamon
3 TBSP. nutmeg
3 tsp. baking soda
1 lg. pkg. chocolate chips
1 cup nuts, chopped, optional
Mix first 6 ingredients until creamy. Sift flour, cinnamon, nutmeg and baking soda. Gradually add flour to creamed mixture. Mix well. Add chocolate chips and nuts. Drop by tsp. onto greased cookie sheet. Bake at 400 degrees for 15-20 minutes.
Makes 11 dozen.
