Stuffed Mushrooms
INGREDIENTS:
1 cup frozen chopped spinach (1 pkg) cook per directions and drain
1 cup pepperidge farm herb stuffing (or other ready to make stuffing)
1 lg onion chopped
3 eggs beaten
1/4 cup graded Parmesan Cheese
1/3 cup melted Oleo
1/2 tsp garlic powder or salt
1/2 tsp. pepper
Cook onions in oleo (can add fresh garlic from a press too then omit garlic powder) Mix spinach, dressing, cheese and seasoning. Add onions in oleo and beaten eggs.
Best to chill 30 min then make into balls and freeze for 1 hour ( but I skip that part and just stuff cleaned large mushrooms where the stem was)
Bake at 350 for 25 to 30 min or till brown on top. Great a for dinner or for appetizers
