Tanya Tuckers Fried Green Tomaters
INGREDIENTS:
1 cup cracker crumbs
1/2 cup cornmeal
4 green tomatoes
1 egg, slightly beaten
* salt and pepper to taste
Mix cracker crumbs and cornmeal. slice tomatoes very thin. Dip slices in egg and dredge in cornmeal/cracker mixture (repeat if you like them extra-crispy). Fry in very hot oil in deep skillet on both sides until golden. Season with salt and pepper to taste.
This recipe also works well with zucchini or squash.
Makes 3 to 4 servings.
