Zucchini Parmesan


INGREDIENTS:

2 medium zucchini, cubed (do not peel)
2 medium tomatoes, quartered
1/3 cup butter

Stew in pan until tender; season with salt, garlic and onions. Stir in 1/2 cup parmesan cheese. Simmer till thickened and serve.
